1-1/2 cup raw chickpeas, soaked 1-1/2 hours and boiled until very soft
3 md. cloves garlic
1-1/2 tsp. salt
2 md. lemons, juice of
3/4 cup tahini
1/4 cup finely minced parsley, packed
Black pepper, to taste
1 dash cayenne pepper
1/4 cup minced scallions

Instructions

Mash chickpeas to a thick paste, using a food mill or grinder, or masher. Combine everything and chill thoroughly.
