6 cups | hot diced potatoes | 9 slices | bacon, diced | 1/3 cup | vinegar | 1 tbsp. | sugar | 1-1/2 tbsp. | prepared mustard | 1 tbsp. | chopped parsley | 1/2 cup | finely chopped onions | 3 tbsp. | bacon drippings | 1 tbsp. | vinegar | 3/4 cup | boiling water | 1 cup | sour cream | | Salt and pepper, to taste |

Instructions
Combine potatoes and onions. Fry bacon crisp. Keep drippings; add vinegar, salt, water, mustard and sugar to drippings. Stir until sugar is dissolved. Add hot mix to potatoes and toss gently until most of moisture is absorbed. Fold in sour cream, parsley, bacon and add salt and pepper to taste. Serve warm or cold.
