Grilled Pork Chops with Chipotle Sauce

Ingredients

Instructions
Heat oil in a saucepan at medium heat. Add onion, salt and pepper, stirring occasionally; cook until onions begin to brown at the edges. Add the chilies, tomatoes and water and simmer for 15 minutes.
Preheat the grill to medium-hot. Taste and season sauce. Remove stems from chipotles (the hot part). Place sauce in a blender and puree.
Season pork with salt and pepper. Grill about 5 minutes per side. Brush each side heavily with chipotle sauce and cook another minute or two. Garnish with lime wedges and chopped cilantro, and serve a dish of the chipotle sauce on the side.
