Marinade
2 cloves | garlic, minced | 1 to 2 tsp. | fresh ginger root, minced | 2 | scallions, chopped | 3 tbsp. | light soy sauce | 1 tsp. | sugar | 1 tsp. | sesame oil | 1 tbsp. | dry sherry | | Salt and pepper to taste | | Hot red pepper flakes or | | cayenne to taste** |

Instructions
Combine all marinade ingredients. Marinate at least 1 hour or overnight (overnight is best). Grill to desired degree of doneness.

I generally serving this dish with fried rice and a stir fried vegetable.
* Pork chops or chicken breasts work well too.
** Or use Chinese chili paste with garlic or Chinese hot oil
