Green Tomato Bread



2 loaves



1 cup canola oil
3 eggs, beaten
2 cups sugar
2 tsp. vanilla
3 cups ground green tomatoes
3 cups all purpose flour
1 tsp. baking soda
1 tsp. salt
1/4 tsp. ground cloves
1/2 tsp. baking powder
2-1/2 tsp. cinnamon
1/4 tsp. nutmeg
1 cup chopped walnuts or
pecans (optional)


Stir together oil, eggs, sugar, vanilla and green tomatoes. Sift together remaining ingredients. Add dry ingredients to tomato mixture and mix well. Pour into 2 well oiled loaf pans and bake at 325 degrees for one hour.
