Ingredients
2 | Tbsp Butter | 1 | Tbsp Olive Oil | 1 can | Coconut Cream | 2 | Tbsp Curry Powder | 3 | Tsp Plain or | | Corn Flour | 1 | Large Onion | 4 to 6 | Sausages | 1 cup | Peas | 1 cup | Corn | 1-1/2 cup | of Rice |

Instructions
Heat a large pan or pot to a high heat and add 3 Tbsp Butter.
Place the sausages into the pan and cook until they begin to gold.
Remove the sausage from the pan and with tongs and a knife cut them into small pieces.
Add 1 Tbsp of Olive Oil to the pot or pan and add the Onion, Peas & Corn.
Once the onion has browned put the Sausages back into the pan.
Add 2 Tbsp Curry Powder and the Can of Coconut Cream and stir.
Now you may add the Flour to thicken the Curry. I generally use about 3 tsp to get to the consistency that I like but each to their own.
Once you find the consistency you are happy with leave to cook on a low heat for another 5 - 10 mins.
Serve with rice.

If you have fresh mint handy this dish goes nice with natural yoghurt and mint as a light topping.
