Ingredients
2 cups | baked turkey or | | chicken leftovers (or browned ground turkey) | 12 | fl. oz. chicken stock | 2 | garlic cloves | 1 | md. sized onion | | Roasted green chilies (as much and as hot as you can handle- I use a frozen container of hot) | 1 | green pepper, diced | | Salt and pepper to taste | | Monterey Jack cheese quesadillas | | Corn, hominy, cooked diced potato, diced jalapeno, cooked rice, stewed tomato, kidney beans (add cooked ingredients within the last hour of cooking) - optional |

Instructions
Add ingredients to pot on stove top set at medium high, or in crock pot on high. Cook for 2-3 hours. Put cooked ingredients in during last hour of cooking.
