Lemon Mint Dressing
| 1/2 cup | white wine vinegar | | 1/2 cup | olive oil | | 3 tbsp. | snipped fresh mint or | | 1 tbsp. | dried mint | | 2 tbsp. | dry sherry | | 1-1/2 tsp. | seasoned salt | | 1 tsp. | garlic powder | | 1/4 tsp. | crushed red pepper, or | | to taste | | 1 tsp. | black pepper, or | | to taste | | 3 tbsp. | lemon juice |

Instructions
Combine all dressing ingredients and blend well. Set aside. In a large bowl combine pasta, peppers, onion and olives. Toss the dressing into the pasta. Chill 4 to 24 hours. Just before serving toss with the feta cheese.
