Grandpa's Favorite Apple Pie

Ingredients
1 | single crust pie (your favorite pastry) | 1-1/2 lb. | Golden Delicious apples, peeled, cored and sliced | 1-1/2 lb. | Granny Smith apples, peeled, cored and sliced | 2 cups | firmly packed brown sugar | 1/4 cup | cornstarch | 3 tbsp. | dark rum or | | apple juice | 1 tsp. | cinnamon | 1 cup | chopped pecans | 1/2 cup | rolled quick oats (not instant) | 1/2 cup | flour | 1 stick | butter, melted |

Instructions
Heat oven to 350°F. Prepare pie pastry and fit into a 9-inch pie pan. Crimp edges and prick bottom and sides of crust with a fork. Bake 10 minutes. Remove to a wire rack.
Filling:
In a large bowl combine apples, 1 cup brown sugar, cornstarch, rum, and cinnamon. Mix well and spoon into partially baked pie shell. Combine remaining 1 cup brown sugar with the pecans, oats, flour and melted butter in a bowl and mix (mixture will be crumbly). Sprinkle evenly over apple mixture. Bake until top is golden brown and juices are bubbling, about 50 minutes. Serve warm.
