| 12 | steaks of some lg. fish (such as king fish, pomfret) | | 2 | onions, sliced | | 2 | tomatoes, sliced | | 4 cloves | garlic, finely chopped | | 5 | green chilies, finely chopped | | 1 tbsp. | garam masala | | 1 tbsp. | vinegar | | 1/4 tsp. | tamarind concentrate in | | 1/2 cup | water | | 2 tbsp. | oil | | 1/4 tsp. | sugar | | Salt, to taste |

Instructions
Salt the fish and set aside. Heat oil in a pan. Put in the onion and sauté it until transparent. Add tomatoes, garlic and green chilies and cook for 3 minutes. Add garam masala and vinegar and stir-fry for another minute. Place fish steaks in pan and add tamarind water, salt and sugar. Cook on a slow fire, shaking the pan every now and then, for 15 minutes. Serve hot with boiled vegetables.
