1/4 tsp. | salt | 1/4 tsp. | sugar | 1/4 tsp. | parsley | 1/8 tsp. | cinnamon | 1/4 tsp. | ginger | 1/2 tbsp. | lime juice | 1/4 tsp. | coriander | 1/8 tsp. | freshly ground black pepper | 1 oz. | gin |

Instructions
Mix everything together until a paste is created and rub on the salmon. Top with a layer of thinly sliced red onion then wrap in foil and bake at 350 until flaky

It was gin in the title of this recipe that caught my eye. In my adaptation, the rub made enough to cover a two person portion sized salmon. You taste the gin first then undertones of pepper, coriander, cinnamon and salmon. I love the flavor of gin so really appreciated this one.
