Instructions
Steam beans until tender (about 16-18 minutes in my steamer) or cook by another method. Fry bacon until crisp and set aside; cut or crumble into small pieces. Cook minced shallot if bacon drippings (adding more if needed) until tender and lightly browned. Add several tablespoons of vinegar to pan, and sweeten to taste with brown sugar or twin (should have a pleasant sweet-sour balance). Add cooked beans to pan along with crisp bacon, and season to taste with salt and pepper. Simmer over low heat, stirring often, until sauce dissipates. Serve hot.
