Garlic and Olive Oil Pasta

Ingredients
4 tbsp. | minced garlic (save 1 tsp.) | 3 tsp. | salt | 6 tbsp. | extra-virgin olive oil | 1 lb. | thin spaghetti | 3 tsp. | chopped parsley | 1/2 | lemon, juice of | | Grated Parmesan cheese | 1 cup | pasta water, held before draining pasta | 1 tsp. | salt |

Instructions
Cook spaghetti as directed, but add 3 tsp. salt to water. In a heavy skillet, cook olive oil with 1 tsp. salt and garlic over low flame. This mixture will become foamy and sweeten as it cooks. When the noodles are cooked, drain well and mix with garlic-oil mixture. Add lemon juice, and water as needed. Add 1 tsp. garlic and parsely. Blend well and serve with grated Parmesan.

ANOTHER SUPRISINGLY TASTY AND FAST MEAL THAT CAN BE SERVED AS IT IS OR WITH ITALIAN SAUSAGES THAT HAVE BEEN SKILLED BROWNED AND STEAMED. ENJOY !
