Fruit Stand Chicken Salad

2 cups cubed cooked chicken
1 cup chopped celery
1 cup seedless grapes, halved
4 sm. nectarines, diced
1/2 cup mayonnaise
2 tbsp. lemon juice
2 tbsp. honey-Dijon mustard or
1 tbsp. Dijon mustard plus
1 tbsp. honey
1 tbsp. snipped fresh or
frozen chives
Salt and pepper to taste
1 head bibb lettuce, washed and dried
1/2 cup lightly toasted sliced almonds


In a large mixing bowl, combine chicken, celery, grapes and nectarines. In a small bowl, combine mayonnaise, lemon juice, mustard, chives and salt and pepper. Add dressing to salad and toss lightly. Serve on lettuce leaves. Sprinkle with toasted almonds.
