Combine eggs and an equal quantity of water. Combine panko and graham cracker crumbs and stir. Form ice cream into uniform balls and freeze hard. Roll ice cream balls in egg wash and then in crumbs. This recipe takes ice cream to soaring new heights of being catastrophically unhealthy, but my simple defense is it tastes sooo good.
Try using an artisanal ice cream and feel free to experiment with all different flavors. I used a honey-pistachio ice cream from Jeni's in Columbus, Ohio.
