Thinly spread the butter on the bread slices, one side only. Spread the mustard evenly over the buttered side of the bread. Arrange the cheese on 4 slices and top with tomato slices and the remaining bread. Beat the egg and oil together, adding salt and pepper to taste. Dip each sandwich into this mixture.
Heat the oil in the frying pan and fry 2 sandwiches at a time until golden brown; drain on a kitchen paper towel. Serve immediately.

For a quick variation use Welsh Rarebit Grillas and omit the mustard.
To upgrade the snack for those watching their cholesterol and fat levels, use one of the low-fat cheeses (edam, mozarella, lite, etc.). Use only the egg whites for the dipping mixture and grill the sandwiches in an oven instead of frying them, turning as necessary. Give the egg yolks to the dog and let him have the heart attack.
For another alternative, try the famous French snack, "Croque Monsieur", and use sliced French bread cut on the bias. For this variation, simply prepare as above, but omit the mustard and tomato and use Joboe cheese and slices of ham. Then follow as above.
