Instructions
Place grated carrots in medium bowl, add chopped parsley, and chopped scallions; toss to mix. Add olive oil, vinegar, lemon juice, sugar, salt and pepper, and mix thoroughly. Refrigerate at least 1 hour.
Carrot ribbons (instead of grated carrots) make this salad more elegant. It may need some more herbs, feta, pine nuts or raisins to jazz it up. Serve on a bed of greens or by itself.
