Ingredients
2 tbsp. | vegetable oil | 6 | fideo coils or | | angel hair nests | 1 | md. onion chopped | 2 cloves | garlic, minced | 2 cups | chicken broth | 1/4 cup | tomato sauce | 1/2 cup | diced tomatoes (optional) | 1/2 cup | sliced carrots (optional) | 1 cup | grated cheddar cheese |

Instructions
Heat oil in skillet, add uncooked fideo coils or angel hair nests. Saute over medium heat until browned on both sides. Remove and drain on a paper towel.
Saute onions, garlic, and carrots until onions are slightly transparent. Add tomato sauce and tomatoes; cook 3-5 minutes. Add sauteed coils or nests and chicken broth; bring to a boil. Reduce heat and simmer covered for 20 minutes, do not remove cover during simmering. Sprinkle cheddar cheese over top and cover to melt.
Author's Comments
If you prefer a more soupy consistency you may add another cup of chicken broth. Peas are another option that may also be an added with nests and broth.
