2 tbsp. vegetable oil
6 fideo coils or
angel hair nests
1 md. onion chopped
2 cloves garlic, minced
2 cups chicken broth
1/4 cup tomato sauce
1/2 cup diced tomatoes (optional)
1/2 cup sliced carrots (optional)
1 cup grated cheddar cheese


Heat oil in skillet, add uncooked fideo coils or angel hair nests. Saute over medium heat until browned on both sides. Remove and drain on a paper towel.

Saute onions, garlic, and carrots until onions are slightly transparent. Add tomato sauce and tomatoes; cook 3-5 minutes. Add sauteed coils or nests and chicken broth; bring to a boil. Reduce heat and simmer covered for 20 minutes, do not remove cover during simmering. Sprinkle cheddar cheese over top and cover to melt.

Author's Comments

If you prefer a more soupy consistency you may add another cup of chicken broth. Peas are another option that may also be an added with nests and broth.
