Easy Mexican Rice

2 tbsp. oil
1 cup uncooked rice
1 can (14 oz.) stewed tomatoes
1 sm. onion, minced
1/4 cup chopped green pepper
1 tsp. chili powder
2 cups water


In a large skillet, heat oil and add rice. Saute, stirring for 5 minutes or until evenly browned. Add all ingredients; mix well. Cover with lid; simmer until rice is tender for approximately 30 minutes. Remove lid and let rice dry out.
