Saute onion celery and carrot. Add meat, parsley and mushrooms and frozen vegetables. Cook until tender crisp. Spread 5 cups of mashed potatoes in large lasagne pan. Spread meat mixture on top. Cover with remaining potatoes and bake at 350°F for 30-40 minutes until hot and golden and serve.
Adjust the amounts of filling and potatoes to match your crowd and the dish.
