Dutch Beef Croquettes (Biefballetjes)

Ingredients
1-1/2 lb. | ground beef | 1 cup | cooked rice | 3 slices | crisp bacon, crumbled | 1 tsp. | salt | 1/2 tsp. | freshly ground black pepper | 2 tsp. | paprika | 1 tsp. | grated lemon rind | 2 | eggs, beaten | 3 tbsp. | butter | 1/2 cup | sour cream |

Instructions
Mix together the beef, rice, bacon, salt, pepper, paprika, lemon rind, and eggs. Shape into 1 inch balls and flatten slightly.
Melt the butter in a skillet; brown the croquettes in it on both sides. Transfer the croquettes to a hot serving dish. Stir the sour cream into the skillet, cleaning the bottom of browned particles. Heat but do not let boil; pour over the croquettes. Serves 4 to 6.
