Down-Home Succotash

1/4 lb. bacon, chopped
2 cups fresh corn
1/2 lb. lima beans
1 md. green pepper, chopped
1 md. onion, chopped
2 md. tomatoes, cut into wedges


In a skillet, cook bacon until crisp. Remove bacon to paper towels and drain all but 1 tb drippings. To skillet, add corn, beans, green pepper and onion. Simmer for 10 to 15 minutes or until vegetables are almost tender, adding water if necessary. Stir in tomatoes and bacon. Cook just until tomatoes are heated through.

Thanks so much for this wonderful recipe. I reviewed approx. 7 others and decided on this one.

I did some tweaking to my taste. I added approx 1/4 quarter cup of soy milk,2 tablespoons of butter and 1 green chili. MM MM MMM good!
