Diet Recipe of Apple Muffins with Cinnamon-Pecan Streusel

|1-2/3 cup ||Almond Meal Flour|
|2-1/8 tbsp. ||Cinnamon|
|1/3 tsp. ||Salt|
|2 tbsp. ||High Fiber Coconut Flour|
|1/2 ||cup, .5 Pecans|
|1/4 cup ||Coconut Milk Unsweetened|
|2 lg. ||Eggs (Whole)|
|8 tbsp. ||Erythritol Powder|
|16 pinches ||1/ Stevia|
|2 tbsp. ||Unsalted Butter Stick|
|2 tsp. ||Vanilla Extract|
|2/3 ||cup, .25 ed or |
|1 tsp. ||Baking Powder (Straight Phosphate, Double Acting)|

First Preheat Your Microwave at 350 degree F. and ready a Muffin Tray with eight cupcake papers.
Add chopped pecans,2 tablespoons granular sugar substitute (eryhtritol),1/8 teaspoon salt, 2/3 cup almond flour, 2 tablespoons melted butter and a pinch of stevia. Now mix them well with the use of fork until it begins to crumble. Keep them aside now.
Now prepare the Muffins Batter: mix all the eggs and whisk 2 teaspoons vanilla, a pinch of stevia,6 tablespoons granular sugar substitute (erythritol), 1/4 cup coconut milk and 1/2 teaspoon ground cinnamon. Now add 1/4 teaspoon salt, 1 cup almond flour,2 tablespoons coconut flour and 1 teaspoon baking powder. Mix them well. Now fold in 2/3 cup of chopped apples.
Now divide this batter in to 8 parts in to the muffin tray and top them with some dry-fruits.
Now start baking for about 25 minutes. After baking remove from the oven and keep aside for 20 minutes to cool. You can eat them instantly or stored them in a air-tight container in the refrigerator only up to 1 week.
