1-1/2 cup unsalted butter, softened
1 cup granulated sugar
1 cup dark brown sugar, firmly packed
3 eggs
2 tsp. vanilla
2-3/4 cup all-purpose flour
3/4 tsp. baking powder
1-1/2 tsp. baking soda
1/2 tsp. salt
3 cups old-fashioned rolled oats
2 cups semisweet chocolate chips

Instructions

Preheat oven to 375°F. In a large bowl with an electric mixer, cream butter and sugars until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla. Into the bowl sift together flour, baking soda, baking powder, and salt. Beat (by hand) until the batter is combined well. Stir in rolled oats and chocolate chips. Drop batter by rounded tablespoons onto lightly buttered baking sheets. Bake in middle of oven until golden, about 10 minutes. Remove from cookie sheet and cool.

I just had a couple of these out of the cookie jar. I swear they're better the next day than they are fresh from the oven. I'll bet these would be a good cookie to pack and mail. Drat... she'll make more of these this weekend to send to her boyfriend at college, and then I'll have to sample more...THIS IS A SUPER COOKIE RECIPE!!!!!

These cookies are the best Cowboy cookies ever! I added dried cranberries, blueberries and cherries and never had so many compliments. I am throwing all the other recipes away!

These are really yummy! I've had requests to make more and have already made 2 batches! Everyone who has tried them loves them as well! I have added cinnamon to my 2nd batch and it tasted way good!
