Ingredients
1 tbsp. | oil | 1 | sm. onion, finely chopped | 1 clove | garlic, crushed | 1 tbsp. | curry powder | 2 tsp. | tomato paste | 2 slices | lemon | | Salt and fresh ground pepper | 2 tbsp. | mango chutney | 2 to 3 tbsp. | cream | 1-1/4 cup | mayonnaise (homemade) |

Instructions
Heat oil in a small pan, add onion and garlic and saute gently until onion is transparent. Add curry powder and cook, stirring for a few more minutes. Stir in tomato paste. Add lemon slices and salt and pepper and cook gently 3 minutes more. Cool and remove lemon slices. When cold, add chutney, mayonnaise and cream, mix well.
Taste and add more seasoning if needed. If mayonnaise is too thick dilute with a little warm water.
