Crab Quesadillas




1 cup (250) cooked crabmeat, roughly chopped
3/4 cup (175) prepared seafood cocktail sauce
1/4 cup (50) mayonnaise
1 green onion, thinly sliced
3/4 cup (175) fresh or
canned corn kernels
1 tub (200 g) Tre Stelle® Bocconcini Cheese,
cut into 1/2” slices
6 8” tortillas
2 tbsp. (30) butter, melted


In a medium bowl combine crabmeat, 1/4 cup cocktail sauce, mayonnaise, green onions and corn; mix well. Cover and refrigerate until ready to use.

Preheat barbecue or indoor grill or pannini press.

Spread approximately 1/2 cup of crabmeat mixture onto each of 3 tortillas; top evenly with Bocconcini Cheese slices and top again with remaining tortillas. Brush tortillas on both sides with melted butter and grill for approximately 2 minutes or until golden brown. Cut into wedges and serve with remaining cocktail sauce.

Makes approximately 12 wedges.
