Condimento Siciliano -- Sicilian Condiments or Dressing

Ingredients
1/4 cup | extra virgin olive oil | 1/2 | sm. onion, chopped | 1 can | Anhovies, packed in oil | 1/4 cup | capers, packed in brine and rinsed | 2 tbsp. | pine nuts (pignoli) | 1/4 cup | raisins | 1/4 cup | white wine | 1 tbsp. | parsley, chopped |

Instructions
Soak the raisins in warm water for about 10 minutes. Drain and set aside. Saute onion in olive oil for 1 minute, or until limp. Add anchovies, capers, raisins and pine nuts and saute for 3 to 5 minutes over medium heat. Add wine and parsley and saute for an additional 1 minute, then remove from heat and let cool.

In a lot of recipes I keep mentioning a combination of ingredients that is typically Sicilian. Here is a recipe for just that combination to use as a topping for boiled potatoes or other vegetables, but as a topping for Crostini or toasted Italian Bread it is outstanding.
