Coconut Shrimp

1-1/2 cup oil
1 cup flour
1 cup beer
14 oz. desiccated coconut
1 lb. prawns, shelled and cleaned


Pour oil into large fryer and heat to 375°F. Mix together flour and beer until it makes a batter. Coat shrimp in batter, then roll in coconut. Fry shrimp in small batches approximately 2 to 3 minutes until golden and curled. Drain on paper towels.

I tried this and my husband and I liked it very much. I normally don't like or eat coconut but liked the sweetness this recipe achieved, was very pleasing. I will surely make it again.
