8 | sweet clementines (or substitute other sm. seedless citrus) | 1 | fl. oz. best-quality balsamic vinegar | 1 tsp. | sugar | | Freshly ground black pepper, to taste |

Instructions
Peel and separate segments of clementines. In a mixing bowl, toss clementines, vinegar and sugar together and mix. Divide among 4 martini glasses, careful to get all the vinegar out of the bowl. Crack fresh pepper over the top and serve.
