3 cups unsifted all-purpose four
1-1/2 cup sugar
2/3 cup unsweetened cocoa
2-1/4 tsp. baking powder
1-1/2 baking soda
1-1/2 cup Hellman's real mayonnaise
1-1/2 cup water
1-1/2 tsp. vanilla

Instructions

Grease 2 (9 x 1 1/2") layer pans; line bottoms with waxed paper (I never do). Sift together dry ingredients (I stir) in large bowl. Stir in mayonnaise. Gradually stir in water and vanilla until smooth and blended. Pour into prepared pans. Bake in 350°F oven about 30 minutes or until cake springs back when touched. Cool completely. Remove from pans. Use your favorite
chocolate icing.

I think this is the original recipe from Hellman's. Easy preparation and cleanup make it a favorite!

I really love this receipe! I like a little lighter chocolate frosting so I adapeted a cooked frosting receipe using some cocoa. I think this cake bakes up better as a sheet cake.

After searching high and low, even using Grandma's, this is the best mayo cake recipe by far. I made it as a sheet cake in an aluminum pan and it still had nice height. 30 minutes exactly is the perfect cooking time. For a great filling try whipping 2 boxes of instant pudding, (I use cheesecake flavor, with 4 cups heavy cream). It makes a mousse like filling that stands up to the second layer. This cake was the hit of my party tonight. Moist, chocolately and delicious!

Very disappointed in this recipe. After making it as a special request by my daughter for her 10th birthday, we discovered this is not the "original Hellman's Mayonnaise Cake". I knew something was missing from the last time I made this cake, but unfortunately did not have time to make another. This cake is a "flour" cake, unlike the original which is EXTREMELY moist.
