2 tsp. ground cumin
2 tsp. ground coriander
2 tsp. ground sweet paprika
1/2 tsp. cinnamon
1/4 tsp. cayenne
1 tsp. salt
1 tsp. grated fresh ginger
2 tbsp. fresh lime juice
3 tbsp. olive oil
4 cloves garlic, minced
1 jalapeno pepper, seeded and minced
3 lbs. chicken pieces or
boneless breasts

Instructions

Rub chicken pieces well with mixture and place in zip-top bag or in a bowl. Refrigerate several hours, or overnight.

The rub can be made in advance, covered and refrigerated up to a week.
