3 boneless chicken breasts

Dressing

1 lemon, juice of
5-1/2 oz. natural yogurt
3-1/2 oz. hummus (chargrilled capsicum flavour is best)

Instructions

Make three diagonal slits on each chicken breast. Cook chicken at 180°C/350°F for 45 minutes (or until juice runs clear). Mix dressing together, and drizzle over each cooked chicken breast

Serve with roast capsicum & corguette, or with a salad of lettuce, cherry tomatoes, and feta cheese.
