Chicken Fruit Salad

2-1/2 to 3 cup diced, cooked chicken
1 cup diced celery
2 tbsp. chopped green onion
1 tsp. salt
2 tbsp. lemon juice
1 can (11 oz.) Mandarin oranges, well drained.
1 cup sliced seedless grapes (red or
1/2 cup slivered almonds, toasted
1/2 cup mayonnaise


Combine the chicken, celery and green onions. Mix in salt and lemon juice; chill covered several hours. Add oranges, grapes and almonds. Toss with mayonnaise, being careful not to break up orange slices. Serve on lettuce leaves with crackers of your choice.

Good for a light luncheon with lemonade or spiced iced tea.
