Heat the oil in a large dep frying pan. Add the curry sauce and bring to a boil. Without reducing the heat, add salt, chili powder and chicken; continue cooking for about 5 minutes. Reduce heat and stir in garam masala, cumin and fenugreek; simmer for a further 2-3 minutes. Put the sliced tomato and half the coriander and cook another 2 minutes. Skim off any excess oil, garnish with remaining coriander and serve.
Pure yummy. Only word to describe this beauty.
