Cherry/Chocolate Mascarpone Parfait




1 can (398) pitted Bing cherries, drained,juice reserved
1 tbsp. (15) all purpose flour
1/4 cup (50) orange liqueur
1 cup (250) Tre Stelle® Mascarpone
1/2 cup (125) brown sugar
1/2 cup (125) confectioners sugar
1/2 cup (125) cocoa powder
2 tsp. (10) vanilla extract
2 cups (500) whipping cream, whipped
1 pkg. (375) amaretti cookies, crumbled to make 1 1/2 cups


In a small saucepan mix together reserved cherry juice, all
purpose flour and orange liqueur; cook on medium/low heat
until mixture begins to thicken ““ approximately 5 - 7 minutes. Remove from heat; allow to cool; add cherries and refrigerate. In a medium bowl, combine Mascarpone, brown sugar and confectioners sugar; beat with an electric mixture on medium speed until smooth and creamy. Carefully add cocoa powder and vanilla; continue beating until combined. Gently fold in whipped cream. Spoon mixture into parfait cups alternating layers with Bing cherries and amaretti cookies. Refrigerate until ready to serve.

Makes approximately 4 - 6 servings
