Cheese Grits Casserole

3 cups water
3/4 cup quick grits
2 cups shredded cheddar cheese, divided
3/4 cup evaporated milk
1/3 cup butter, softened
2 lg. eggs, beaten
6 to 12 drops hot pepper sauce
1/8 tsp. ground black pepper

Instructions

Preheat oven to 375°F. Grease a 2 quart baking dish. Bring water to boil in sauce pan. Slowly stir in grits and cook 5-6 minutes. Add 1-1/2 cups cheese, evaporated milk and butter to the saucepan. Stir until the cheese melts. Add eggs, hot pepper sauce and pepper, stir well. Pour into prepared baking dish and sprinkle with remaining cheese. Bake 40 to 50 minutes until puffy. Let stand 5 minutes before serving.
