1 cup diced tomatoes
1 cup chopped green onions
1 cup chopped parsley
1-1/2 cup garbanzo beans, cooked
1/4 tsp. pepper
1/2 cup olive oil
3/4 cup fresh lemon juice
3 cloves garlic, crushed
1/2 tsp. dried mint flakes or
1-1/2 tsp. fresh mint flakes
1 tsp. salt

Instructions

Mix all ingredients and serve cold.

Pretty mounded on a platter and garnished with fresh mint sprigs.
