2 lbs. carrots, cooked & mashed
1/2 cup butter
2 eggs, beaten
3 tbsp. flour
1 tsp. baking powder
3/4 cup sugar
1 dash cinnamon

Instructions

Combine all ingredients and pour into a buttered, 2-quart souffle dish. Bake at 400°F for 15 minutes. Reduce heat to 350°F and bake an additional 45 minutes.
