1 pkg. (10 oz.) soft silken-style tofu, chilled
1 container (1 lb.) low-fat cappuccino yogurt, chilled
2 cups vanilla-flavoured soy beverage (So Nice brand), chilled

Instructions

In blender place tofu, yogurt and 1-1/2 cups soy beverage. Blend on low speed as container will be very full. Increase speed; blend for a few seconds longer. Pour remaining 1/2 cup soy beverage into serving pitcher or small punch bowl. Add blender contents; whisk briefly.

Forget the guilt of eggnog indulgence this holiday season, or any other time, by enjoying this rich, delicious, nutritious beverage. For special adult occasions, add a coffee-chocolate liqueur such as Bolivar and dust with freshly grated nutmeg or sprinkle with cinnamon and a bit of orange zest. The drink can be made well ahead of time and kept refrigerated. Simply whisk before serving. This drink also makes a very nutritious breakfast beverage or snack.
