Canadian Maple Leaves Cookies

Ingredients
4 cups | all purpose flour | 1 cup | butter, softened or | 2 | sticks) | 3/4 cup | light brown sugar, packed | 1/2 cup | pure maple syrup, or | | maple flavor syrup | 1 tsp. | maple flavouring, (optional) | 2 tsp. | cream of tartar | 1 tsp. | baking soda | 3/4 tsp. | salt | 2 | lg. eggs |

Instructions
In a large bowl, measure all ingredients. With mixer at low speed, beat ingredients until well blended, occasionally cleaning the bowl with rubber spatula.
With hands, shape dough into ball; wrap with plastic wrap and refrigerate 1 hour or until dough is easy to handle. (or, place dough in freezer 30 minutes.)
Preheat oven to 350 F. Grease large cookie sheet, or use parchment paper greased. On lightly floured surface, with floured rolling pin, roll out one-third of dough 1/8 inch thick; keep remaining dough refrigerated. With floured 3 ½ inch leaf shaped cookie cutter, cut dough into leaves; score leaf “veins” in dough with tip of knife. Place cookies, 1 inch apart, on cookie sheet.
Bake cookies 10 minutes or until golden. With pancake turner, remove to wire racks to cool. Repeat with remaining dough and trimmings. Store in tightly covered container. Makes about 4 dozen.
