4 to 6 lbs. | moose roast | 1/2 cup | vegetable oil | 2 tbsp. | red wine vinegar | 1 tsp. | curry powder | 1 clove | garlic, crushed | 1/2 cup | pancake mix | 1 dash | paprika | 1 tsp. | sea salt | | Fresh ground pepper to taste |

Instructions
Place meat in a roasting pan and roast at 400 F. for 15 minutes.
Meanwhile, in a small bowl whisk together oil, vinegar, curry and garlic powder. Baste meat with this mixture, reduce heat to 325 F. and roast another 15 minutes.
Meanwhile, in a small bowl mix together pancake mix, paprika, salt and pepper. Coat meat all over with this mixture; roast another 2 1/2 hours for medium meat. Let roast stand 15 minutes before carving.
Serves 8 to 10.
