Preheat oven to 375°F. Grease the bottom of a 13x9x2-inch pan. In a large bowl, sift together mochiko flour, sugar, baking powder and cinnamon; mix well. In a medium bowl, combine coconut milk, evaporated milk, eggs and vanilla. Pour over dry ingredients and mix well. When the batter is smooth and there are no lumps, stir in the melted butter. Pour the batter into the prepared pan and bake for 50-60 minutes.
