Broccoli Rice Casserole

1 pkg. frozen broccoli
1 can cream of mushroom soup
1 lb. Velveeta cheese
2 cups milk
2 cups minute rice
1 yellow onion

Instructions

Mix the milk and soup then add the broccoli, rice and onion. I like to add half of the cheese, cutting it into small chunks and mixing it in. I pour it all in a greased casserole dish then slice the rest of the cheese and place it on top. Bake uncovered at 350 for about an hour, stirring every fifteen minutes to evenly dispurse the melted cheese. Season to taste with pepper.

I love this casserole recipe. It is simple and delicious. I usually make it on Sunday evening and my son and I eat it all week with different meats.
