Author's Comments

This is similar to a recipe from the Lazarus cookbook. It makes a pretty salad for the plate. You could also add mandarin oranges for extra color.

This salad is a huge hit wherever I take it. If I showed up to a potluck without it, my friends would probably send me home! It's also great without the bacon if you're vegetarian.

I recalibrated the recipe for 40. It converted well. The only thing I would personally change is the amount of sugar. I would decrease it by half. It is a colorful dish with the mandarin oranges.

This salad is great! If you don't care for raisins you can substitute 1/2 cup of sunflower seeds or use both.
