Broccoli Potato Bake

4 sm. potatoes, peeled and diced
2 tsp. margarine
1 tsp. salt
1/4 cup skim milk
1 pkg. (10 oz.) frozen chopped broccoli
1/4 cup grated cheddar cheese


Cook, drain, and mash potatoes with margarine, salt and milk. Preheat oven to 350°F. Cook broccoli according to package direction. Drain well. Fold into mashed potatoes. Put in casserole sprayed with vegetable pan spray. Sprinkle with cheese. Bake for 15 minutes or until cheese melts.

This made a nice, quick meal. Instead of boiling the potatoes, I nuked them in the microwave (as well as the broccoli).

Overall time: 25 minutes

And, it was pretty darn tasty too!
