Get rice started in rice cooker. 2:1 ratio water to rice. (2 cups water to 1 cup rice) Dice Onion, Garlic, Ginger and saute in olive oil - substitute hot chili oil for more flavor. Once the onion combination begins to become translucent, add in Carrots, Broccoli, and Tofu (cubed) and stir / toss for 10-15 minutes.
I make this 1x per week usually. It's quick, healthy, cheap, and you make it all in one pan. There's enough for leftovers, too. Add soy sauce, sweet chili sauce, and hot sauce to taste.
