Blueberry Muffins



12 servings



1-1/2 cup flour
1 cup sugar
2 tsp. baking powder
1/4 tsp. salt
2 eggs, beaten
1/2 cup butter, melted
1 pint blueberries, washed and drained


Mix all items together at once. Fold in blueberries. Fill 12 muffin cups and sprinkle with cinnamon and sugar. Bake 20 minutes at 375°F.

Author's Comments

The original recipe calls for chopped pecans. Fill cups half full, then sprinkle with nuts and cinamon sugar, then fill rest and sprinkle again.

I never use nuts because too many people are allergic and I do not really like pecan with blueberry either.
