I give this recipe 4 stars for taste and 2 stars for presentation. The tomatoes I used wouldn't sit upright and kept toppling over. Even spearing them with a toothpick didn't help much. I suggest slicing a thin layer of tomato from the bottom to create a flat surface that the tomato can sit on.
As for the recipe, I had basil on hand and used that instead of parsley. I used only about 3/4 pound of bacon and had leftover filling. You may be able to make 24 B.L.T. bites from this recipe.

Instructions
Cut a thin slice off of each tomato top. Scoop out and discard pulp. Invert the tomatoes on a paper towel to drain. In a small bowl, combine all remain ingredients; mix well. Spoon into tomatoes.
