Bloody Mary Chopped Salad

Ingredients
1 tbsp. | olive oil | 1 tbsp. | minced shallot | 1/4 cup | vodka | 1 can | spicy V-8 juice | 2 tbsp. | Worcestershire sauce | 2 tbsp. | red wine vinegar | 1 tsp. | Dijon mustard | 1 tsp. | sugar | 1 tsp. | bottled horseradish, drained | 1/2 tsp. | celery seed | 1/2 | lemon, juice of | | Salt and pepper to taste | 8 oz. | cooked shrimp | 2 cups | chopped tomatoes | 1 cup | sliced celery | 1/2 cup | sliced cucumber | 1/3 cup | halved pimiento-stiffed olives | 1/4 cup | sliced red onion | 3 tbsp. | chopped fresh parsley | 1 tbsp. | olive oil |

Instructions
Heat 1 tablespoon oil in a saucepan over medium-high heat. Add the shallot and saute until soft around 3 minutes. Deglaze with the vodka and simmer until almost evaporated. Add the V-8 juice, Worcestershire, vingar, mustard, sugar, horseradish, celery seed and lemon juice. Let boil for 5 minutes, then add the salt and pepper to taste. Remove from the heat and chill in the fridge.
Toss the remaining ingredients together in a bowl and season with salt and pepper. Split the salad among 6 salad plates and serve with the now chilled dressing in shot glasses with the salad on the side.
