BEST EVER Sugar Cookie

This cookie is my all time favourite sugar cookie with so much flavour. |
Ingredients
| 3C flour | | 2t baking powder | 1/4 | t salt | | 1C unsalted butter or | | margarine | 2 | lg. eggs | | 2t vanilla | | 2t grated lemon rind | 6 dozen | 350 degrees |

Instructions
STEP ONE
On wax paper put 2.5 C flour, bp and salt. In a large bowl cream the butter and sugar until light yellow and fluffy.
STEP TWO
Beat in the eggs, one at a time, then vanilla and lemon rind. Stir in the flour mixture with a wooden spoon. Divide into three pieces and wrap each in plastic wrap. Refrigerate at least 2 hours.
STEP THREE
Preheat oven to 350, butter three cookie sheets, roll out with cutters and decorate.
Bake 8-10 minutes until sides start turning brown….(I’m pretty sure I only cooked them for 8 minutes and they really weren’t brown at all. You can make these a bit thicker as well.)

This cookie is wonderful if made thicker as it is so light tasting. The lemon peel is wonderful!!
